Our mango-avocado salsa recipe was inspired by a recipe originally found in The Professional Chef cookbook. This is another dish that I would gladly eat any day of the week and never get tired of it! Mixing in 1/2 cup of diced tomatoes will give your salad a bit more umami and juiciness. If you leave the seeds in, it will triple the heat. If you remove the seeds/membrane from the peppers, it will keep your salsa milder in heat. Then, the halibut was lightly seared in some extra virgin olive oil – a perfect method for cooking this fish because it doesn’t over power the wonderful fresh flavors of this mild white fish. Swap the jalapeño for a Serrano pepper to give your salsa a kick of heat.

First, Jack made a delicious fresh salsa with mango, avocado, red bell pepper, onion and a little bit of jalapeno pepper in a wonderful dressing of lime juice and seasonings, plus a bit of orange juice which really helped to smooth and brighten the flavors of the salsa.

Squeeze lime juice over the ingredients and sprinkle with salt. Add in two tablespoons of the reserved dressing to the salsa.

Serve it on the side of grilled fish, chicken or meat. Combine the mango, avocado and green onion in a bowl.
